One of the businesses visited by Congressman Michael Cloud on Thursday was The Mad Batter Cheesecake, 117 N. Esplanade, which has proven its resilience through hurricanes and the challenges posed by COVID, proving that nothing can stand in the way of a delicious dessert.
Brittani Quinn, the owner of Mad Batter Cheesecake, shared her journey from a part-time baker to a successful business owner.
“I wanted to be a baker prettymuchmyentirelife. Although I didn’t attend culinary school, I did a lot of baking in high school. I always dreamed of opening a bakery, specifically focused on cheesecakes,” Quinn recalled.
In 2017, she and her family lived in Indianola. At that time, her husband returned to college while she worked part-time.
“Then Hurricane Harvey hit. Things became diffi cult because we lived by the water,” she explained.
On the auspicious day of November 8, 2017, Quinn posted eight flavors of cheesecakes on Facebook, hoping a few friends and family members would place orders. “Two weeks later, I received 30 cheesecake orders. I was just kidding at first, but suddenly I had an instant business that kept growing,” she said enthusiastically.
By 2018, she was operating from a food truck.
“A friend had been running his food truck in Rockport, but after Harvey, everything got shut down for a long time. I quickly outgrew that space in just four months,” she noted, which led her to move her cheesecake business to a 400-square-foot garage apartment while she remodeled a 3,000-squarefoot space in Port Lavaca.
“In the midst of all the crazy construction, COVID hit. Somehow, we survived it all, thanks to the wonderful community of Port Lavaca,” she continued.
In 2023, working with Cuero Economic Development, she relocated to Cuero, where she now operates from a remodeled building located at 117 N. Esplanade St. and employs over 20 employees.
“My four-year-old daughter and I live in the basement below it. We absolutely love Cuero and the community, and we're right where God wanted us,” she said.
Mad Batter specializes in cheesecake.
“We make over 160 flavors of cheesecake. Each flavor has its own unique recipe. I don't use a base recipe because I think that each flavor needs its own density and its own sweetness. So, each cheesecake flavor is its own experience,” she explains.
Quinn mentions that they offer breakfast items, various desserts, and light lunch options, often incorporating cream cheese in addition to catering services for complete meals.
A special attraction for the kiddos is the quarter pizza ride. The pizza ride is a popular attraction for kids, providing a fun experience reminiscent of Quinn's childhood. She shares how people from out of town visit her bakery specifically to ride the pizza ride and buy cheesecake.
