The Cuero Record

Just as the daunting summer heat starts to settle in, there’s a new mom-and-pop business opening up at 136 East Main Street. A perfect stop for something nice and cool, Cuero native Rudy Rocha and his wife, Jeanette Rocha, will be opening The Green Cow Creamery this Saturday, June 11. The month of June is also proclaimed as national dairy month.

Rocha, currently serving as the John C. French assistant principal and the Gobblers’ head cross country coach, is a 1987 Cuero High School graduate. After a remarkable running career that includes being a two-time state champion in the 3200-meter run back in his high school days, Rocha went on to become an All-American runner in college. He attended the College of the Ozarks, and Southern Illinois University, where he later met Jeanette. Rudy is still the school record holder at CHS in the two-mile run set back in 87’ with a time of 9:28.56. Throughout his career, Rudy made a couple of U.S. teams and also ran for Nike, and Brooks Running. His wife is originally from Seattle, Washington. The two have a business aspiration that they are hoping can add a jolt of activity to downtown Cuero.

The 100% all-natural ice cream parlor will be open seven days a week with hours from Sunday through Thursday being 12 - 9 p.m. and Friday - Saturday, 11-10 p.m.

“Every day is an ice cream day,” declared Jeanette. “During football season we will stay open later. That’s the great thing [about owning a business], you can make those kinds of calls.”

The Green Cow Creamery will have 20 flavors to choose from and will be rotating flavors based on what’s in season.

“I will have some non-dairy options, I think that’s a really big thing,” shared Janette. “Also, we have an oat-based ice cream, a coconut ice cream base, and an almond ice cream base to use for these non-dairy flavors. This is just to give people more options. I also have sugar-free options as well.”
